What I like most is the explanation of the ingredients and their properties. It does matter what kind of eggs we use and it does matter if the ingredients are warmed to room temperature or not. Since I have been baking at home for some time, I was a little skeptical about buying this course. After completing the course, I can say that I gained a deeper insight into the very creation of basic biscuits and creams, which I realized at the end that I had never prepared before or at least not in this way. Also, I always mixed the masses with whisks and did not mix them in, as Sandi keeps emphasizing in the course. I think that everyone who loves baking home desserts should download the contents and start with the online courses on basic pastry making techniques. I have to admit that up until now I didn't know you need to add some fat (almond flour, etc.) to the sponge batter to give it a better texture. I recommend it to everyone!
